Visitors expecting the food of Australia to be traditional British far are in for a surprise. Since the Second World War, Australian cuisine has evolved. The influx of people from various countries to make Australia home has certainly enriched its palate.

Today the food of Australia bears influences not only from Britain, but also Greece, Thailand, Italy, Vietnam, Malaysia, Lebanon, Indonesia, Turkey, to name a few. There are now restaurants in the country offering fusion food known as Mod-Oz cuisine. Having said that, there are times when the Australians sit down to a traditional meal, such as turkey for Christmas, albeit a midsummer Christmas.

In addition to ingredients introduced from different countries, there are also native herbs and spices and well as food of aboriginal origin that are becoming popular. Among them, the quandong, bush tomato, munthari and wild limes are just some of the native fruits that are giving Australian cuisine its unique character.
